Photoshop Element 7.0 help?

I'm needing some help with elements 7.0...I am wanting to do a black and white picture but make only a few things color. For example eyes. Can anyone give me a step by step on how to do this? I've got the dummy book but I guess I need the idiot version. I would greatly appreciate any help with doing this.
 
Assuming you are starting off with a color picture and you want to simply maintain the original color of an area.

Step 1 - make a copy of the background layer, you shouldn't be working on the original. Click the eye next to the original background in the layers palette to make it invisible

Step 2 - Use a lasso tool to select the area you want to remain color.

Step 3 - Go to Layers>>New>>via copy

Step 4 - Make sure the new layer in the layers palette is on top and select the copy you made of the background layer.

Step 5 - Go to Image>>Adjustments>>Hue and Saturation and turn the saturation level all the way down to the left (should read like -255)

Step 6 - Save as a .psd file so as not to loose all your work, then save as a .jpeg to share and publish on the web, use in a digital picture frame, whatever.

I'd also probably do some adjustments to the contrast of the black and white layer till I got the look I wanted.
