photoshop(cs3) question?

is there a way to get rid of 1 kind of color and/or colors similar to it on photoshop, as in to where it crops that color out of the picture rather than changing it to black or white, as in if I had a picture with a guy throwing a bucket of paint, all of the drops of paint would become see through and I could add whatever I wanted behind it.
 
Yes, with layers and the magic wand tool (put the magic wand into the "multiple selection" mode). Save your original separately so you can start over if you want. Then once you've made your selections, save your selection and just make them transparent instead of a color. Then add a layer with whatever you want, and swap your layer order.

You must be using a file type that supports transparency. For example, gif, but there are others.
