photography touch up ???s?

i look at a lot of touched up pics and the ones i really like are the ones that show the colors really well and sometimes it looks fake what is this touch up called
 
If you like the colors really vibrant and ones that seem to pop out, it sounds like you talking about saturated images. If you play with the saturation level, you can get awesome colors! You can however, depending on how far you go, loose some of the realism of the picture.
