On a Ford F-250 the Water hose that connects to the engine by the thermostat .....?

There is a hose that is rubber that comes off the radiator and that hose connects into the engine by the thermostat. The hose is rubber, but the piece that it connects to is metal. That metal piece has a hole in it and pisses water if radiator is full of water and causes engine to overheat.

Does anyone know what the mental fitting piece is called and how to get it out?

The rubber hose connect to a metal fixing on the engine , and that fixing has a hole and needs to be replaced
