Okay to Cook Refrigerated Chicken?

Once again, my mom's doing something with chicken that worries me. We bought some chicken breasts about six days ago. Today's the sell-by date, and of course she doesn't want to waste all that food. The problem is she's left it in the refrigerator this whole time instead of the freezer. She claims it must be okay since the grocery store didn't have it frozen either. I'm not convinced; I've read a few things saying we should have frozen it after two days. She's gone ahead and cooked it. Is it safe to eat?
