Depending on where you go and what you intend on doing with the degree, anthropology and economics are entirely compatible, especially in this day and age.
Additionally, if you are mathematically inclined, you might consider anthropology (or mathematical) modeling as far as resource use based on culture. This--especially considering the area of sustainability and health care--is an opening field because of the connections between culture, resource allocation, and health.
So, a major/minor, or major/major combination of economics and anthropology may be something to consider.
