Off the books in small restaurant, unpaid training?

Last Week (one week ago exactly) I was hired at a small Greek restaurant as a counter girl. I've come in 4 times (2/3 hours each) to train with the other girls. I've been complimented as to how quickly I've picked it up and am doing exactly what the other girls are doing (with the exception of waitressing) although maybe a little bit slower as I do not have all the prices perfectly memorized and whatnot. I do just as much work as they do. Our boss told me on Sunday that I got start work on Monday (yesterday) so I believe I am getting paid for yesterday alone. However, he then decided it was best that I train for another week or so.

I am not getting paid for training. The work is all off the books, and I can't help but feel I'm being taken advantage of. This man is the type to charge someone extra for an extra few olives, so I wouldn't put it past him. Can somebody give me some advice?
