New to gardening, and want to grow herbs and stuff in pots?

I've never actually grown anything, but would like to try growing herbs like cilantro and rosemary (and a few others for cooking). I'd also like to try strawberries since I saw a friend had some in a pot. But I have no idea how to actually DO this, I know I need soil-less potting mix and terracotta pots instead of the plastic ones they come in. Do I remove all the soil the plants originally come planted in? Will they come with real soil? (I don't want bugs and such in the house). I'm just not sure about actually planting them. I can't find anything on YouTube that actually shows this, most sites just talk about where to place them for best light. I want to know what to do from the point of bringing them home from the store in the plastic pots. Thanks!
I want to grow them on my back porch, but be able to bring them inside during the winter. I live in Phoenix so winters aren't too bad. I plan on using smaller pots for the herbs so this shouldn't be an issue...I know the berries prob won't grow in the winter. :)
