Need some insight about Chinese buffet's?

Ok, this is something that's been working on me for a LONG time... LOL.. whenever I go to a Chinese buffet I see all the wonderful foods they have prepared.thats the love of it. BUT... I notice when any of the workers sit down, their meal consists of plain rice, fruit... none of the fancy schmancy stuff from the bar really... so my question is, if it truly is Chinese food then why dont the Chinese eat it? Have you noticed this? Am I crazy?
 
Most foreign cuisine we have here in the states are almost more based on America than that of its origin. For example, take a pizza. Most italians don't eat it round, and use maybe a little olive oil for in lieu of garlicky tomato sauces. Real mexican burritos would have potatoes and peas and other stuff, not just beans rice and cheese. So Chinese is no excpetion. They eat a lot of rice, fruit veggies and seafood. But the General Tsos chicken with the sugarry spicy sauce, that I devour whenever I have it? They really don't eat that. So is it really chinese food at those places? Not really.
