my gold fish has pimples on his gills: signs of breeding?

he has pimples on his gills and he keeps rubbing his body over the females. now how do i know when he is absolute ready so i can transfer him to another tank just for breeding so then i can remove them both. and also can i pick any female? or only the one that responses back to him?
