My computer will not let me rename my photos?

They are saved in jpg format and when I go to rename them it says "If you change a file name extension, the file may become unstable. Are you sure you want to change it?" I click yes and it changes the file to where I cannot view it. So I undo the rename and it is fine. I have renamed all kinds of photos before. Why is it doing this and how do I fix it?
 
Every file has its own extension (the last words after a dot in their name) so it could be associated with a program.
Images can have .jpg or gif or .png .... and other.
So when renaming, do not include the dot and the words after so the program association do not change.
