A regular musubi is formed by grabbing a handful of hot rice and shaping
it with your hands. It takes some practice to get the shape right and
you can always tell a person experienced at this. The hands are cooled
down first by rinsing in cold water and salt is sprinkled on the wet
hands to season the rice. The idea of grabbing a handful of hot rice is
scary for most folks but with a little practice, one learns how to do
this without burning their hands.
