MS Word automatic page numbers?

PRIMARY QUESTION
I'm writing a paper in MS word and it will be quite lengthy. I would like to reference charts and tables throughout the paper. Since some of the references will be many pages away, how can I say "reference Table X on page ##", where "X" is the table or figure number which is automatically updated and where "##" is the page number which is also automatically updated?

ALTERNATE QUESTION (similar, but slightly less challenging)
Let's say I'm collecting and re-writing my company's HR Handbook, Engineering, ISO, Quality (etc...) manual. Often these documents have policies or sections within them and many of the policies/sections link to others. How can I say "refer to Policy 3.101 on page ##" where "##" is the page number the policy appears?

I don't want to do this manually because this will be an evolving document and will change over time. Manually managing this will require someone to proof-read this document every time a change is made to ensure that all the correct tables/figures are referenced and on the correct pages.

p.s. I'm using MS Word 2010
p.p.s. Is there a way to do this in Adobe (std/illustrator)? (for catalog creation)
