Making "posh" fish fingers, what is a distinctly impressive fish to use?

I have an idea for dinner thats a spin on old school fish fingers,
ive thought about john dory, turbot or dover sole but dont really have a clue
I can get most types of fish here, it doesnt have to be an expensive type, but i wouldnt mind if it was something a little more extravagant than cod.

to keep it original, ill probably be using a cherry tomato sauce with possible balsamic reduction, but id love to hear your ideas!
