lunch for a two day camping trip?

im going on Duke of Edingbrough and i need ideas for my lunch. For the first day i just need a sandwich, but for the second i need something that won't melt, turn stale, require a freezer, smell or any other problems you can have with food kept in a rucksack for 2 days. Any suggestions?
 
The grocery stores all carry the premade canned chicken and tuna salad in a can or pouch with crackers, or canned deviled ham, an apple, a small container of peanut butter, beef jerky, and trail mix, of course!
