Lumia 800 problems?

Hi guys new to this forum and to smartphones so hope you will bear wih me.

Im impressed with the enthusiasm for this product cos my 2 day old one is nothing but frustrating so i guess its my dimness which I hope you will rectify.

trying not to whine: how do you get upper case/capitals on either keyboard? Cant set up my accounts until i can use passworRAB which use both upper and lower case.
how do i increase font sizes? Most text on screen is clear and crisp until you get to texts and phone nurabers and any other entries.
How do I delete...stuff? eg the voicemail phone nuraber which is regularly dialling up - i guess to check, for voicemail that i dont yet have.
Why are all the settings and instructions only accessible via data downloaRAB? My dear old early nokia didnt do this. Should be on the phone until u want to delete.
deliberately bought a wireless so i could connect via my computer modem and use its account to save data costs. but can I? Cant seem to use wireless without the data connection being on. Am I too thick? Any help appreciated

There is a button on the left of the keyboard...an arrow pointing up...that works the same as shift on a computer. Press it once to get one capital letter, hold it down for a second and it will stick...that's caps lock.

You should be able to use the wireless without data being on. go to settings > mobile network> turn off data connection. press the back arrow, scroll up to wifi turn it on...wait for it to scan and find your network..enter your password. that should work fine.
