Can anyone recommend were I can learn about cooking from a very "theoretical" standpoint. I don't want recipes. I want to learn about basic principles and building blocks. For example, information about how to make a roux and where it and other sauces should be used, or what herbs should be combined with what...etc. Any help would be appreciated.
I agree that a class would be helpful, but the other suggestions would just give me pointers and recipes, not a thorough outline of cooking concepts.
