Keys to successful, in gym juice bar?

I am considering opening a juice bar in one of the local gyms in the area. The gym is a semi-national chain and has a member base of about 3,000. This gym used to have a juice bar many years ago under different ownership but the area for the juice bar has remained vacant since.

I was reading an article in a magazine directed at fitness center owners and operators and it was talking about gyms adding juice bars for profit. It said the average profit on a smoothie is $3 and can be a considerable additional revenue source for the gym

Since the local gym's corporate obviously has not intention of using the area, I thought I could make a go of it. Considering I am a current employee of the facility and know all of the employees, management and a good deal of the members, I think I would have a slight advantage to somebody coming in new.

One problem I do see is that there is a Smoothie King AND a Jamba Juice within a mile of this gym. However, like the article I read pointed to, people don't like to have to make multiple trips to different spots, especially when time crunched.

So, I figured if I could streamline a menu of 8-10 smoothies ranging from pre-workout to post-workout, energy, diet and immune boosting, I could corral a lot of these member before they even leave the club. If I could add coffee and make a breakfast sandwhich or two for those rushing to work after their workout and maybe a few lunch offerings (salads or sandwiches) I may be able to snag even more profit from our on-the-go members.

So, my question is mostly for those who have maybe tried this and failed and what they have learned or for those that are currently doing this successfully and what is working for them.
