I was wondering if there's any explanation for my kefir producing excellent results when I switched from cows milk to goats milk? Has anyone else had similar experiences with switching kefir over to goats milk? Could it be because the original strains of kefir were born out of goats milk, camels milk and not the domesticated cattle, which is a relative late-comer to the world?
My kefir was so sour and obviously not fermenting properly, because the taste had me puckering my lips like I was sucking on a lemon. Now, the kefir has a very mildly sour taste, and there's a little bit of carbonation going on. Yum!
