Sonata Arctica - Winterheart's Guild (yeah I know it's poppy power metal, but it is uplifting)
Pelican - The Fire in Our Throats Will Beckon the Thaw (very uplifting and beautiful)
Porcupine Tree - most music... even 'sad' songs like 'Drown With Me' make me happy.
 
I love that one. In fact it's one of the first Beatles songs that made me really get into them. It's where I saw the magic - despite having liked other songs in the past, more passively I guess.
