I have cayennes this year too and plan on freezing them like I did my serranos last year. I just put them in canning jars, froze them, and take them out one by one as I need them. The crunch is gone, but the flavor is still good.
 
cayennes actually dry very easily, just lay them out on a cookie sheet in a dust free place...if you want to speed it up, warm your oven & put them in there...you can then string them together with needle & thread and hang in our pantry, store them in an old coffee can or grate them and store grated cayenne in a jar for cooking...
 
You can freeze them to use for cooking. Or you can put them in a jar and pour boiling vinegar on them to make pepper sauce, or you can leave them on the plant till they turn red, them dry them for pepper flakes.
