Italians: is it possible to cook pasta sauce too much?

Is there a moment when it's at its best? I mean it takes anywhere from 4-8 hours and then it's beautiful. But what if I just leave it on the stove on stove for like 10, 12, 16 ... 24 hours. What are your thoughts? Does it get better? Stay the same? Does it get worse somehow? (I don't know how it would get worse - evaporation maybe?) Just wondering what you think. I like to cook mine for like 24 hours even though it's good after a third of that but I want to know others' thoughts. I guess I just enjoy cooking it so much I don't want it to be done til it's all gone.
