italian culture anyone...?

Italians eat a lot of vegetables and fruits, fresh and cooked. Produce in Italy is maybe the best in the world, with the emphasis always on quality and flavor, rather than on appearance as in America. Probably the single most characteristic dish would be a kind of roast casserole of eggplant, bell peppers, tomatoes, anise root, and onions, sprinkled with olive oil and parmesan cheese. Not to be missed, in season, are sliced russet pears, covered with shavings of pecorino cheese; and sliced honeydew melons covered with paper-thin slices of prosciutto (a kind of dry ham)--sounds weird, but it's delicious.
 
so i was wondering what are some signatures food italians eat and if i were too go into a italian household what would i be expecting?
 
I worked as a pastry cook for some time and here's a "signature" dessert you might expect. Now, it shall also depend on the region of Italy your host belongs to,

Canolo. It's basically a crunchy handmade shell made with batter, very crispy, contains chocolate chips, yellow cream and floretine riccota. You may add rum for flavouring.

my few trips over to italy i found that pasta was used like we do potatoes as a side dish and there were a fair amount of fish on the menu!!! yes of course there were the sauces used like are gravies!!!
