Is this a good diet and exercise? How can I improve?

I'm starting college in 3 weeks and I'm REALLY trying hard to get a good steady eating plan and exercise plan for the whole year.

Breakfast: Kashi go lean cereal with soy milk and soy yogurt and an apple and water or green tea
Lunch: organic peanut butter on whole wheat toast topped with sliced bananas, apple or peach and water
Dinner: udon noodles with brocolli and soy sauce to taste or sometimes soy burger patty with brown rice and mixed veggies and water
Dessert: soy yogurt with kashi go lean cereal mixed in and apple slices

Workout
30 minutes of p90x, 1 hour at the gym (cardio and strength everyday) and then 10 minutes of running at school

I also eat vegan waffles, bagels with strawberry jam/organic peanut butter for breakfast sometimes. Is that bad?
