Is there truly such a thing as a non~"buffet religion"?

I have sometimes heard adherents of different faiths claim that their faith or others' faiths are "buffet religions" in that you can pretty much pick and choose. Based upon what I've observed, essentially every religion is like this to a great extent. Sure, there may be a few core tenets that are generally agreed upon, but beyond that, is there really any such thing as a "Non~buffet religion"? I see disagreements over fundamental concepts of each major religion all the time, with each faction perfectly happy adhering to its own version, and often condemning others' versions. Your thoughts?
