Is it ok to run 3 quarts oil in 4.3 Chevy motor?

After my dad died I looked at his maintenance records for the entire eight years he drove the Blazer, he changed the oil every 2500 miles an only filled it with 3 qts., not 4-1/2 qts.,as per manual?? This Blazer with 180K miles on it , has left ...6 (yes six!!) ASE mechanics scratching there heads ,dumbfounded , because this car runs like new...huh!?!? I don't get it? Is my dad on to something? or .......... what?
Yes , records show (he) changed and power flush the coolant every fall , with out missing even one , wow!! also..I know he would go on long trips down the interstate at warp speed, aswell. I'm starting to see a pattern here...ummm. after reading thes answers , the guy new his ride,Iguess. :)
What I still don't get....(is) my Blazer which is the same , will shut off , if the oil level goes below 3-1/2 quarts.? ! ? ! how did he get around that ....one ?!?!
 
That is amazing running a quart & 1/2 low would put it near the risk of running the oil pump dry .But if it worked it worked ,I wouldn't do it .
 
Maximum capacity is recommended for added cooling. The coolant must have been constantly monitored & serviced on a regular basis. Because the lubricant was religiously changed every 2500 miles, there was never enough contaminants to cause a problem.
