Is it a law to give out complete work history?

Sometimes when applying for jobs I find it irrelevant to give certain information out, especially old jobs or jobs I have had that are not pertinent to getting a job. This question is regarding filling out a job application that asks for work history.
Also, when giving out work history what is a good rule of thumb for how far back to go?
 
You don't have to give out ANY work history at all--it's the law. You can be as private about your past as you want.

And they don't have to hire you.

Hell, you don't even have to apply for the job if you don't want.
