is handling a dirt bike easier than a street bike? have tips about ridding and controls?

some background before my question. I just finished first day of riding at the local motorcyle training class and i found it pretty hard to use all the controls on the yamaha dirt/dual bike they provided. i understand that on the street if you have too much confidence you can end up hurt. but also true if you have too little. out of ten people in the class, i've managed to drop the bike once during my third attempt at the 90 degree turn, stalled my bike about 15 times during the 5 hour period (most stalls happen consecutively because of the added pressure from stalling the first time) and have gotten lost in the gears plenty of times while trying to shift from 3 to 2 to 1 etc. and my trottle wasn't very smooth there were periods of too much throttle followed by too little throttle. ( i got a bit better by the end of the session) . orginally my ideal bike would've been a cbr600rr but i know that i wont beable to afford one as my first bike so i have been looking into gs500f from suZuki and the ninja 250 as my first bike. (after my experience in class the cbr600rr is out of the question as of the moment unless handling is a lot easier or i get better)

keep in mind that i'm picking up ridding because i want to ride as a hobby so i dont plan on doing 90+ ever. nor will i be popping wheelies and those sort of stunts.

so if you have any tips, advice, inputs or anything of that sort please let me know your opinion on this.
