Might seem like a crazy idea... but I know that actually canning salsa yourself is going to increase the shelf life a lot. We just recently came into several large 64 oz. containers of salsa... and find it highly unlikely that we will be using it all by the maker's suggested expiration date.

So, I thought... hey... what if we canned these in some large mason jars?

Is this a good or bad idea... pros and cons? Why, or why not?

Thanks.
msjantastic: I understand why it doesn't make sense. Try reading the question next time and that will help.

In my question I didn't even say I purchased them... I said that "we came into several..."

You assumed that we bought more than we could consume, when in fact, these were a prize we won... not something we actually had to purchase.

Next time use common sense when answering a question, and learn to read.

Does not make any sense at all. Why would anyone buy that size if not planning on using it. Sure it will hold up for awhile if kept in the fridge. Next time use common sense when purchasing your products.

Yes it ok. All you have to do is boil it then put it in the jar and put the led on it. The heat will sill the jar. I do it with hot souse all the time.
