Yesterday's, as well as one day last week, was pan seared Dover Sole, on
sale for $6.99 per pound at Whole Paycheck through yesterday. My wife
has always found preparing thin, small pieces of fish like this a lot of
work because she breaded then fried, so I suggested simply a minute or
so on each side on a high heat, and served with some sort of simple
butter and herb sauce. Absolutely delicious - plain, simple, but
delicious. Both times, I bought 2 to 2-1/2 pounds of fish, enough for
dinner for the two of us plus leftovers.
Add a veggie and a starch and you're good to go.
We had enough leftovers from last week that I had it several times more,
again very simply - I put some mayonaise on a hot dog roll, warmed some
leftover fish in the microwave, and added a few bits of lettuce and some
cherry tomatoes. Again, simple but delicious, and took less than five
minutes to prepare using the leftovers.
