I'm in pretty good shape, and lead a fairly active lifestyle, is it a bad idea

to bike 60 miles in a day? I wouldn't say I'm in the best shape, but I can run 2 miles pretty easily, I just don't bike that often. If I was pacing myself, and it's mostly flat, (and of course have a cell phone for emergencies) do you think I'll be fine?
Oh, I plan on going about 8 hours, plenty of breaks and such. Assuming I don't have anywhere to replenish my water, about how much do you think I'll need? Like 2 Nalgene bottles? 3?
Well... it's not so much a path as country roads that I've driven on a good deal of times, and yes I could go get a pitstop, but it would be 5 miles out of my way. :)

The idea is to bike from one big city area to the next.
