I have a '06 mustang GT but where i live things can be a bit far apart and my mustang can be very fuel consuming. I want to look into a bike for long distance trips (that are safe to ride on, my moms pretty strict about that) to save some fuel when possible. I just want a 250R with legal liability, any ideas on how much that insurance might cost? Id use an online calculator but it wants too much information. First hand experience would be great but any any advice is appreciated. Thanks and have a great day!

Honestly, your insurance rates will be jacked-- whether you're in a sports car or on a bike. Young drivers, especially males (stereotypical, unfortunately), have higher insurance rates because of the "risk factor." Sports cars, particularly convertibles, are high-insurance. Your best off with a good-mileage car that might not look as cool as a bike or a sportscar, but is safer. Most insurance companies also have a good-grade incentive too. My first car was a '97 subaru outback with good gas mileage-- it was a safe car, the insurance rates were lower, and I received a good student discount that helped a tremendous amount. Wheels are wheels, no matter what they look like. If you're still hung up on the bike, take the time and do the research.
