If I record a conversation using an MP3 recorder, does that stand up in court?

or can the case be made from the other side that MP3s can be manipulated?

I want to record all of my business dealings for my protection but I don't know if an MP3 recording stands in court
 
You can't do it surreptitiously. The other person has to know that you're recording, else that IS illegal. Otherwise, go for it.
