If I increase the weights of my training Equipment, will I still see results?

I heard somewhere that if I do the same exercises I won't see the results I want anymore. I run about 4.5 miles 5 days a week and do weight training for 30-40 mins after. If I increase the weights of the dumbbells, will my muscles grow bigger? The thing is, I don't want to be super buff. I just want to be fit and be able to see my abs, biceps/triceps, pecks and other muscles more clearly. Also, i checked my weight for 2 weeks, and it increased even though I've been exercising everyday. Does that mean I've lost fat and grown muscle or I've just gained weight?
