My mother and her boyfriend are vegan and they're both okay with me being nearly carnivorous entirely, but I wanted to know from other vegans out there, how can I make a delicious vegan meal NON-fattening? As soy can be low in fat and nuts are high in fats (granted those are good fats) I am stuck with how to cook for her. Yesterday I made a parsnip roast with other root vegetables and fire roasted peppers and pistachios... it was good, and that means a lot since I can't often comply with vegan foods, but seriously, that was a LOT of work for a small meal. If homemade vegan food is always going to take this much effort to make healthy and delicious, I may resort to ignoring her diet completely. Though i think i'm too nice to do that without trying a few more times. =)
