Ideas for Wedding Buffet?

We (our families and friends) are planning to prepare our own wedding buffet. We want to do something that isn't too difficult to get together considering it will be a busy time. Perhaps something that could be prepared months ahead and frozen. We want to keep it budget friendly but would like to do something different that the boring old turkey or ham. Any ideas? It will be for about 150-200 people.
I don't know why people keep choosing to put thumbs down on all these ideas... I think they are all great. I realize much will have to be prepared on the wedding day. I really like the mexican food idea. Thanks to everyone for their ideas. We'll let you know what we go with.
 
Most people like Mexican food.

If there is no one opposed to simple Mexican Fare then go that route. I mean, there are so many different things to eat from simple taquitos and burritos to enchilada dinner with rice and beans,
White wine or champagne, fruit, chili, do the math, it will be far less expensive and usually nobody minds the calories if it's a special occasion. Basically I am white but love international cuisine. I therefore suggest this because of the simplicity of it all.

It is from watching his KERA series that I have really been inspired.
 
Stuffed Shells & meatballs or lasagna (can be frozen ahead of time)
Pork tenderloin (can be prepped ahead of time then cooked the day of)
Fish (cooks fast, easy to make in large batches)

If you want some ideas, look at wedding menu's online -- all of those places choose items that can be easily made ahead of time and aren't difficult to prepare. If you find a menu with prices you'll even see which ideas are the most budget friendly.
