I'd like to cook really the best shoulder of lamb tomorrow and ?

I've seen two slow cook recipes. I dont want anything fancy flavourwise but I just wondered .. both of them say turn oven right up to the highest to preheat, then turn down to 3 or 4 when you put the lamb in and cook for about 4 hours. But both recipes say to cover the lamb. If I cover it will it still go nice and sticky and crispy on top? Thank you
 
What you have to do to get it crispy on top is to baste it. Open oven and dip your spoon into the released fat and pour it over the top. Keep doing this and then if it fails to crisp. Cheat put the grill on and give it a quick blast.
 
take the cover off 30 minutes before the end of cooking time to crisp up the top & perhaps up the temperature slightly too....it will be nice!
 
I don't think it will turn out sticky and crisp but you could sear it in the oven or place it under the broiler for a few minutes to get it crispy.
