Looking for some great nutritious dinner options that are low calorie.

No fish please.
Would prefer only recipes that you have made and liked as opposed to those just found n the internet.

Heck, I can find those!

stir fry...

any colour pepper, onion, beansprouts, bamboo shoots, water chestnuts (or a tin of stir fry veggies for the last 3), chilli, garlic some cooked chicken, some noodles if you like. and for the sauce, teriyaki sauce, soy sauce, rice vinegar and some cornflour to thicken. basically all you do it put it in a wok and cook it for maybe 10mins til the veggies are softened!

I love a stir fry cos you can put anything in....i sometimes dont bother with the noodles or I add chorizo or bacon strips or baby sweetcorn

i love to saute' chicken that has been cut up in bite sized peices in garlic and a little bit of butter and olive oil . you have sevaral options with chicken. fresh veggies like squash and zuccini are always good sauted up with chicken. i like to place chicken in a deep pan and bake it in italian dressing, and serve either with or on top of a salad, also, if you like, you can pour apricot preserves all over some chicken breasts and poke a lot of holes in the chicken to let the apricot seep in and bake, it kinda tastes like chinese orange chicken with out all the calories. and chicken sauted with brocoli and onions is excellent as far as low calorie and full of vitamins

I've made this recipe several times, and thought it was yummy...

***Chicken Stir-Fry Wraps***

1 1/2 pounds boneless, skinless chicken breasts, halved horizontally and thinly sliced
Coarse salt and ground pepper
2 tablespoons olive oil
1 large onion, halved and thinly sliced
1 large red bell pepper, ribs and seeds removed, thinly sliced
3 cloves garlic, minced
1 1/2 teaspoons grated peeled fresh ginger
1/4 to 1/2 teaspoon red-pepper flakes
3 tablespoons soy sauce
3 tablespoons rice vinegar
1 1/2 teaspoons cornstarch, mixed with 1 tablespoon water
12 to 16 Boston lettuce leaves (about 2 heads)

Directions

1.Season chicken with salt and pepper. In a large nonstick skillet, heat 1 tablespoon oil over high heat. Add half the chicken; cook, stirring constantly, until opaque throughout, 2 to 4 minutes. Transfer to a plate. Repeat with remaining chicken.
2.Add remaining tablespoon oil to pan, along with the onion and bell pepper. Cook, stirring constantly, until onion is tender and golden, about 4 minutes (reduce heat if browning too quickly).
3.Reduce heat to medium; add garlic, ginger, and red-pepper flakes; cook, stirring, until fragrant, 30 to 60 seconds.
4.Stir in soy sauce, vinegar, and cornstarch mixture; remove from heat. Add chicken and any accumulated juices; toss to coat. Serve in lettuce cups.
