I need help choosing a car audio system?

so I've been doing some research on car audio and keep coming across different stuff. I've come to conclusion that you don't want RMS of sub to be more than Watt of amp. Meaning you don't want the sub to overpower amp. If I got 2 10 inch subs with 400 RMS each it would equal 800 RMS. what size amp would I get?
So anything above or close to 800 RMS? What would be the best way to wire it?
I want 2 kicker CVR10's and want a kicker amp and theydont have 800 RMS amps but they are CLASS D 2 OHM MONO. I thinK might go with the 1000
another thing I came across was someone had 2 subs with 400 RMS eac and only had a 500 RMS amp...... would that work if it was wired right... I think with each sub on a different channel so they each had 500 watts each from the amp????? or does it not work like that?
