This is just a really simple Hungarian side dish. I'd describe it as
a vegetarian Goulash with potatoes as the main ingredient. Krumpli =
potato in Hungarian.
Saute' 1.5 cooking onions in vegetable oil. Add 6 cloves of garlic;
chopped. Add 1/2 green bell pepper. Add 1/2 red bell pepper(all
chopped). When it's nice and saute'd add a medium tomato diced. Add
1 and a half Tbsp. of sweet Hungarian Paprika. Add a 1/4 tsp. of
cayenne. Add water; about 10 oz. Cook this at a light simmer for
about 1.5 hours. Add sliced carrots, and diced potatoes. Cook until
done, adding salt.
It's a side dish. But it's good to eat as a main dish. It's good for
losing weight.

Hello Portland, your recipe sounds very tasty! I have to ask however,
why the sauteed onions and peppers are simmered for so long. They must
be cooked well in the process of sauteing them, so is the 1.5 hours of
simmering to just meld the flavors before adding the carrots and
potatoes? It would seem that simmering them 1.5 hours *after* adding
the carrots and potatoes would make those items also more flavorful
while cooking them.
