M Man Lover New member Jun 16, 2009 #1 I am trying to figure this out with no luck. I cooked the brisket for 8 hour and it came out dry as well as tough. I used charcoal and kept the heat around 280 to 300 degrees. What am I doing wrong and is there a good book on this topic?
