I have been asked to participate in the cooking of a freshly slaughtered pig

for an Asian picnic.? Although I have some really good recipes for traditional roasts, such as Pork Butt or Shoulder, I have a feeling that the meat I'll be receiving to cook is not going to be like the stuff I get at the store. Also, I have zero experience cooking fresh kill. Any body out there with experience here? I've asked that they give me the shoulder butt, and I have no idea how big or small this is going to be. But, I do know that it will have bones. Help!

I'm hoping you aren't from a southern state but if you are....then that pig is gonna be 100 - 200#'s.
The following recipes are for any cut that you get. It can be cooked whole or broken down into smaller portions. Since you said Asian, I am going with Filipino. There are always people there to help with the cooking so if you are unsure, someone will help you.

Pit or open fire go with this pinoy styly roast pork
Pork any cut
Brown sugar
Apple cider vinger
Worcestershire sauce

Rub and slow pit fire the pig till its ready. Most likely since it is an asian affair, there will be someone that mans the fire.

Crockpot Slow cooker go hawaiian style kalua pig

5 #'s pork
4 tsp sea salt
2 ounces liquid smoke
5 cloves garlic minced
1/4 c water

Place pork in slow cooker and add the rest. Turn on high and go to sleep. When you wake up its done. Remove the pork and shred. You can strain the grease out of the cooking liquid and toss the shredded pork back in.
 
pork, contrary to beef doesnt stay stored for a long period, maybe as little as 1 day. Cook it as you usually would, keep in mind the leaner meat would dry out quicker than if the pork is resting for 1 to 2 days. Fatty meat would be quite the same as you'd get from the butchers

I dont see a problem with bones, I cook pork on the bone all the time, but if you want to debone it, Its not difficult to debone pork at all, but its one of them things either you know how to or you dont. Go to a butchers and ask for tips on how to debone the animal, or visit a web site, search for 'how to debone a pig' you will find very crude pics about the subject hence the reason im not putting a link here. im assuming you are an adult since you're cooking for a bunch of people, but not everybody here is.

Well....maybe not. New experiences can be fun. You've got to watch out with some of the foriegn cultures. If they start handing out hot dogs, yet you see no buns? THEN.....start running!
 
It needs to be cooked outside over an open pit with something to hold it over the fire all the way through it. It takes a very long time to cook and must be turned regularly.
