I have a cold. What can I cook for dinner that's pretty quick and easy?

I'm not so sick that I can't go to the store to get ingredients, but I need a fairly simple recipe. I don't want to have to cook a lot of things separately, so maybe a stew or casserole? It's 6:30pm right now, so it also needs to be done within the next 2 hours. Please don't suggest chicken noodle soup (I like heartier soups and stews) or ordering something in (I like cooking and I've been bored all day, so I want to cook). Thanks!

THICK AND HEARTY BEEF STEW
serve with crusty dinner rolls

2 lbs. ground beef minute steaks, cubed
4 c. diced potatoes
2 c. sliced carrots
3 c. diced onion
2 c. sliced celery
1 pkt. Lipton beefy onion soup mix
15 oz. can tomato sauce
4 c. hot water
salt and pepper to taste

1. In dutch oven, brown meat with salt and pepper. Drain.

2. To the meat, add carrots, onions, celery, soup mix, hot water, and tomato sauce. Simmer 15-20 minutes, stirring occasionally.

3. Add potatoes. Simmer until vegetables are tender.
