I could not unspam my friends's e-mail because I unfortunately checked "empty spam

Yeah, just tell her to resend the same thing she did before, no big deal all she's gotta do is just hit the send or forward button 
Definitely don't want friends' emails with all that annoying spam
In fact, I'd probably leave the spam folder on that setting of 'let sit for a month' because you may have had other important emails get deleted automatically because of that (most likely it was all just spam but you never know)
