We always par-boil ribs first to save time.
BBQ Ribs
Cut the ribs into serving sized portions, i.e. 3 or 4 ribs each.
Par-boil them in a large pot of water, that has been spiced.
I stick cloves through bay leaves into a large onion & put in the pot.
Simmer for at least 1/2 to an hour, then remove them to grill.
You can finish them on an indirect charcoal grill or in a 350F oven.
Cover with foil; the goal is to brown them without drying out.
Timing will depend on thickness & meatiness, allow an hour.
Brush with BBQ sauce during the last 15 minutes, do not burn.
BBQ Sauce
To make your own sauce, start with a tomato base.
You can use 1 cup of ketchup or spaghetti sauce or canned tomatoes.
Drain the canned tomatoes to reduce the amount of liquid.
Cook in a pan with chopped onions & diced peppers.
Use chili or jalapeno peppers, cayenne or paprika, if you want heat.
Add 1/2 cup of brown sugar, 1/4 cup vinegar, & 2 tbsp mustard.
Or substitute 1 tsp of dry mustard or mustard seeds.
Simmer to reduce liquid & blend the flavours.
