I am dieting and exercising, why am I gaining weight?

I have been on a new diet and exercise plan for a little over a week now. I have a very small breakfast (usually just a piece of fruit), have half a bagel with a little peanut butter for lunch, and then a light dinner (such as veggies, lean cuisine, chicken salad, etc.) During the day I always want to snack, so I only allow myself to snack on fruits and veggies. Admittedly, I eat a LOT of fruit and I don't count calories, but I'm sure my daily caloric intake is under 1000 calories. I also bike uphill 2 miles each day. So far though, I seem to have actually gained one or two pounds. I don't think it's muscle. Does eating a lot of fruit make you gain weight, or is there some other reason I'm missing? Thank you!
The water weight is a good point, especially considering all the natural sugars I'm consuming with the fruit. I'll cut down some of my servings of fruit and replace them with carrots and celery and see if that helps.
 
All i know is that you shouldn't be having a calorie intake less than 1200 unless under medical supervision or you are morbidly obese. Its really unhealthy and dangerous and if you lose weight too fast its most likely not gonna be permanent.
