How to you change the phone settings from one name to another on the iphone 4 after doing the 5.0 update?

I went to update my new software on my iphone 4 and when it came back to life all of my phone was erased and set back to what i had back in April. I did a back up before i start the software update but clicked on the wrong name of the device i wanted it come back to "life" to and i think that's why i have all my stuff from April (that's when I switched from At&t to Verizon and i did a back up to save stuff) now currently on my phone instead of what i just backed up. I need help on itunes changing the device name from one setting to the new one i set up???? anyone a itunes genius that could help? i lost all my notes and photos and apps help please!!!
