How to update a jail broken & unlocked 3g iphone?

My 3g iphone is unlocked and jail broken on version 3.1 software with a firmware of 04.26.08. Can anyone PLEASE tell me (step by step) how to update to the latest software version without losing my unlock? I cant download any of the latest apps with the version I'm on. Greatly appreciated, Thanks!
