How to unlock an iPhone 3GS?

I have an unlocked 3GS (running 3.1.3 [7E18], Carrier 5.1, Modem firmware 05.12.01, and Ultrasn0w 1.1-1).
I want to update my software to iOS 4.1 but I need to unlock again and I don't know how.
Please tell me step by step how this is done!
Oh and I don't have an At&t sim card so I won't be able to activate it...Please help and you'll be the most amazing person in the world:)
