How to stop getting oily chips that have just been cooked?

I keep having this problems of when taking the chips out of the frying pan they come out oily and saggy, you cant eat them, there is so much oil in them! Is there anything I can do about this, to get rid of the oil? Thanks
 
First step is to use the right potatoes for this use white potatoes only for deep frying they wont absorb too much oil , next set a bowl lined with paper towel the paper will catch the oil from them , you can also use your oven for this , in a bowl add the cut chips, drizzle them with a bit of oil ,salt and spices if you wish, place them on a single layer on top of a cookie sheet in a pre heated 425F oven bake until golden. Not soggy and not too much oil either.
